        Jiayuguan as a new city, everyone in the city is a barbecue master. Roasted mutton, roasted lamb skin and roasted mutton seemed unable to show their superb skills, so even the bone marrow of the sheep was roasted. Jiayuguan roast mutton, often jokingly said: in addition to wool do not roast, you can eat any part of the sheep.

        Although Jiayuguan barbecue originated in Xinjiang, it has its own style. Xinjiang barbecue meat is big, so it is often roasted with cooked meat.         There are two secrets for Jiayuguan people to make barbecue. One is the iron bucket beside the barbecue stand, in which the boiling mutton oil can quickly lock the moisture in the meat. The second secret is the secret seasoning, which makes the mutton kebab scorched outside and tender inside.

        Jiayuguan night starts with a handful of barbecue, which is the "city flavor" in the memory of every Jiayuguan people.
        Every summer, Jiayuguan night's "firework flavor" is gradually strengthened. After the sun sets, the temperature gradually cools down. People about three or five friends, a barbecue, a roast lamb chops, a box of beer, sit at the door of the barbecue shop, eat meat, drink in a big bowl, enjoy the summer night, and become the most comfortable life of Jiayuguan people.

        The ingredients of Jiayuguan barbecue are all from the Small Tail Han sheep around the city, with less smell, good meat quality, and fine segmentation of mutton parts. There are more than 20 parts for customers to choose from, including roasted lamb chops, roasted lamb legs, roasted lamb skin, roasted lamb liver, roasted lamb head, as long as you can think of it. The best food often only needs the simplest way of cooking. Only in Jiayuguan can you eat roast mutton that only needs salt to accompany the flavor and make the meat smell fully distributed. Jiayuguan barbecue is cut and roasted as soon as possible without pickling. In the process of roasting, seasoning is put at the same time to keep the flavor of mutton as much as possible.

 

        Located 20 kilometers northeast of Jiayuguan City, there are more than 1400 ancient tombs on a vast desert. It is the largest underground gallery group in the world, the Wei Jin tombs in Xincheng. Archaeological experts have found brick portraits with barbecue kebabs on the East and west walls of the front chamber of tomb No. 6 of the Wei and Jin Dynasties. The figures on the bricks wear meat with two fork shaped tools and barbecue it on a tripod. From these brick paintings, it can be seen that they were very popular in the Wei and Jin Dynasties. They were also the daily diet of high officials at that time. At the same time, they were also the dietary culture of northern nomads. It shows that people in the Wei and Jin dynasties took barbecue as a special food for their relatives and friends.
